Essential oils can be an easy substitute for fresh herbs, especially in the winter. Because they’re so concentrate I recommend pouring a drop into a separate container first, or simply dipping a toothpick into the oil bottle. You can always add more if needed but you can’t remove it if you’ve added too much.

One of the things I love most about living in Colorado is the ability to eat seasonally from the local farms or your own vegetable garden.  For some reason I never ate winter squash when I lived in Florida but now I can’t wait for the local harvest.  It’s a healthy and sustainable way to live.  Here’s a great recipe using my favorite butternut squash that can be made vegan or not.  It uses the healthy paleo fat of coconut oil and essential oils as seasonings.
